Crispy Quinoa & Bean Patties

1 can kidney beans, drained and rinsed
3 cups cooked quinoa
2 ½ cups cooked sweet potatoes
½ cup red onion & ½ cup chopped kale, sauteed together until soft
¾ cup fresh or frozen corn
2 eggs
approx. ½ cup panko bread crumbs
¾ cup grated parmesan cheese
½ t salt
¼ t pepper


Mash beans with fork in a large bowl. Add all remaining ingredients and mix well.

Form approx. 12 3-inch patties. Heat 1 T olive oil in a frying pan and cook patties until browned on both sides.

Great with yogurt/cucumber/dill sauce or tahini sauce. Serve with green salad and crusty bread.
