Honey Ginger Dressing

This dressing is super fabulous on salad greens, or mixed with grated beets, carrots and fresh mint. It’s also good with steamed baby carrots, beets and sweet peas for a warmer dish.

5 T minced ginger
2 T honey
5 T rice vinegar
1/8 t ground white pepper
1/2 t salt
1 cup vegetable oil

DIRECTIONS

Combine all ingredients, except oil, in a food processor or blender and process until smooth. Keep the motor running and slowly add oil in a thin steady stream. Taste and adjust seasoning.
