Green Apple Salsa
This is a light, summery salsa that’s delicious with chips or on top of grilled salmon.
3 plum tomatoes, chopped
1 cup Granny Smith apples, chopped
1/2 cup cucumber, chopped
1/2 cup corn kernels
1/2 cup red bell pepper, chopped
1/4 cup green onions, chopped
1/4 cup red onion, chopped
2 1/2 T fresh cilantro or parsley, chopped
1 1/2 T fresh lime juice
1 T jalapeno, seeded & chopped
1 T balsamic vinegar
1 1/2 t sugar
3/4 t salt
1/2 t ground black pepper
DIRECTIONS
Combine all ingredients, stirring well. Serve at room temperature or chilled.
