Peanut Sauce
This is a delicious sauce to use with a tofu & vegetable stir-fry or rice noodles.
2 scallions, finely chopped
2 garlic cloves, chopped
generous pinch chili powder
1 t granulated sugar
1 T white vinegar
2 T soy sauce
3 T crunchy peanut butter
DIRECTIONS
Beat all ingredients with a fork until well blended. Avoid using a food processor for this as the texture should be slightly chunky. If the consistency is too thick, thin it with a little water. Serve at room temperature as a dipping sauce for vegetables, or heat slightly and toss with vegetables, tofu, and/or noodles.
