Vim & Vit Salad
This is a great salad full of vitamins & vitality!
1 small crisp lettuce, torn into pieces
8 oz. young spinach leaves
2 carrots, coarsely grated
4 oz. cherry tomatoes, halved
2 celery stalks, thinly sliced
1/2 cup raisins
1/2 cup blanched almonds or unsalted cashews, halved
2 T sunflower seeds
2 T sesame seeds, light toasted
For the dressing:
3 T extra-virgin olive oil
2 T cider vinegar
2 t honey
juice of 1 small orange
salt & freshly ground black pepper
DIRECTIONS
Put the salad vegetables, raisins, almonds and seeds into a large bowl. Put all the dressing ingredients into a screw top jar, shake them well and pour over the salad. Toss thoroughly and divide between four small salad bowls. Season and serve lightly chilled.
