Mighty Mushrooms

½ oz. dried porcini mushrooms
¼ cup olive oil
1 cup sliced button mushrooms
4 oz. oyster mushrooms
4 oz. fresh or 1 oz. dried shitake mushrooms
2 garlic cloves, crushed
2 t ground coriander
salt & freshly ground black pepper
3 T chopped fresh parsley

DIRECTIONS

Soak porcinis in a little hot water for 20-30 minutes. In a large saucepan, heat oil and add all the mushrooms, including the soaked and drained porcinis. Stir well, cover and cook gently for 5 minutes. Stir in the garlic, coriander and seasoning. Cook for another 5 minutes until the mushrooms are tender and most of the liquid has been reduced. Mix in the parsley, let cool slightly and serve.
