Smoked Salmon Salad

4 cups mixed salad greens
1 sweet potato, cut in ½-inch cubes
1/2 T cajun seasoning
1 T olive oil
1 t tamari or soy sauce
1/2 red & 1/2 yellow pepper, sliced
1/8 red onion, thinly sliced
6 sun-dried tomatoes, thinly sliced
1/4 cup bean or lentil sprouts
1/2 cup toasted pecans, chopped
4 oz. smoked salmon, chopped

For the dressing:
1/4 cup fresh orange juice
1/8 cup olive oil
2 T balsamic vinegar
1 T whole grain mustard
salt & pepper to taste

DIRECTIONS

Steam sweet potatoes until just soft, about 10 min. Place in a bowl to cool & dry for about 10 min. Combine cajun seasoning, tamari & oil, and toss with potatoes to cover. Cook in skillet over medium heat until browned on all sides. Transfer to paper towels to cool. Place salad greens, peppers, onion, sun-dried tomatoes, sprouts and pecans in large bowl. Add cooled sweet potatoes and chopped salmon. Combine all dressing ingredients and toss with salad just before serving. (serves 4)
